Drumstick Sambar
Drumstick Sambar is a flavorful and nutritious South Indian lentil soup made with drumsticks, lentils, tamarind, and a unique blend of spices.
Ingredients - Serves 4
- Curry leaves - few
- Dry red chillies - 2
- Mustard seeds - 1 teaspoon
- Oil - 2 tablespoons
- Water - as required
- Salt - to taste
- Asafoetida - a pinch
- Turmeric powder - 1/2 teaspoon
- Sambar powder - 2 tablespoons
- Tamarind - small lemon sized
- Drumsticks - 2, cut into 2 inch pieces
- Toor dal - 1 cup
Let's Get Started
- Wash the toor dal and pressure cook it with enough water for 3-4 whistles. Once the pressure releases, mash the dal and set it aside.
- Soak the tamarind in warm water for 10 minutes, then squeeze out the juice and discard the pulp.
- In a pan, add the drumsticks, tamarind juice, sambar powder, turmeric powder, asafoetida, salt, and water. Cook until the drumsticks are soft.
- Add the mashed dal to the pan and mix well. Let it simmer for a few minutes.
- In another pan, heat the oil and add the mustard seeds. Once they start to splutter, add the dry red chillies and curry leaves.
- Pour this tempering over the sambar and mix well.
- Serve the Drumstick Sambar hot with rice or idli.
