Dorayaki
Dorayaki is a popular Japanese dessert made of fluffy pancakes filled with sweet red bean paste.
Ingredients - Serves 6
- Sweet red bean paste - 1 cup
- Vanilla extract - 1 teaspoon
- Milk - 3/4 cup
- Egg - 1
- Sugar - 1/4 cup
- Baking powder - 1 teaspoon
- All-purpose flour - 1 cup
Let's Get Started
- In a mixing bowl, whisk together the flour, baking powder, and sugar.
- In a separate bowl, beat the egg and then add milk and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a non-stick pan or griddle over medium heat.
- Scoop about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Remove the pancakes from the pan and let them cool slightly.
- Spread a spoonful of sweet red bean paste on one pancake, then sandwich it with another pancake.
- Repeat with the remaining pancakes and red bean paste.
- Serve the dorayaki warm or at room temperature.
