Dolmeh
Dolmeh is a traditional Persian dish made with grape leaves stuffed with a flavorful mixture of rice, herbs, and spices.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground lamb - 1/2 pound
- Ground beef - 1/2 pound
- Dill - 1/4 cup, chopped
- Mint - 1/4 cup, chopped
- Parsley - 1/2 cup, chopped
- Onion - 1 medium, finely chopped
- Basmati rice - 1 cup
- Grape leaves - 1 jar, drained and rinsed
Let's Get Started
- In a large bowl, combine the rice, onion, parsley, mint, dill, ground beef, ground lamb, lemon juice, olive oil, salt, and pepper. Mix well.
- Place a grape leaf on a flat surface, shiny side down. Spoon about 1 tablespoon of the rice mixture onto the center of the leaf.
- Fold the sides of the leaf over the filling, then roll it up tightly from the bottom to the top.
- Repeat with the remaining grape leaves and filling.
- Place the stuffed grape leaves in a large pot, seam side down, in a single layer.
- Add enough water to the pot to cover the grape leaves. Place a heatproof plate on top of the grape leaves to keep them submerged.
- Cover the pot and bring the water to a boil. Reduce the heat to low and simmer for 45 minutes to 1 hour, or until the rice is cooked and the grape leaves are tender.
- Remove the dolmeh from the pot and let them cool slightly before serving. Serve warm or at room temperature.
