Dizi
Dizi is a traditional Iranian dish made with lamb, chickpeas, and a variety of vegetables.
Ingredients - Serves 6
- Fresh herbs (such as parsley or cilantro) - For garnish
- Lime - 1, juiced
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Tomatoes - 2 large, chopped
- Carrots - 4 medium, peeled and chopped
- Potatoes - 4 medium, peeled and quartered
- Onion - 1 large, chopped
- Chickpeas - 1 cup, soaked overnight
- Lamb shanks - 4
Let's Get Started
- In a large pot, add the lamb shanks, chopped onion, turmeric, cumin, salt, and pepper. Cover with water and bring to a boil. Reduce heat and simmer for 2 hours, or until the lamb is tender.
- Remove the lamb shanks from the pot and set aside to cool. Strain the broth and discard the onion.
- In a separate pot, add the soaked chickpeas and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the chickpeas are tender.
- Once the lamb shanks are cool enough to handle, remove the meat from the bones and shred it into small pieces.
- In a large baking dish, layer the shredded lamb, cooked chickpeas, potatoes, carrots, and tomatoes. Season with salt and pepper.
- Pour the strained lamb broth over the ingredients in the baking dish. Cover tightly with foil.
- Bake in a preheated oven at 350°F for 2 hours, or until the vegetables are tender.
- Remove the foil and drizzle the lime juice over the dish. Return to the oven for an additional 10 minutes.
- Serve the dizi hot, garnished with fresh herbs.
