Dinuguan
Dinuguan, also known as pork blood stew, is a Filipino dish made with pork, pork blood, and various spices.
Ingredients - Serves 6
- Water - 2 cups
- Cooking oil - 2 tablespoons
- Bay leaves - 2
- Black pepper - 1/2 teaspoon
- Fish sauce - 2 tablespoons
- Green chili peppers - 2 pieces, sliced
- Ginger - 1 thumb-sized piece, minced
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Vinegar - 1/4 cup
- Pork blood - 1 cup
- Pork belly - 1 pound, cubed
Let's Get Started
- In a large pot, heat the cooking oil over medium heat.
- Sauté the garlic, onion, and ginger until fragrant.
- Add the pork belly and cook until browned.
- Pour in the vinegar and let it simmer for a few minutes to remove the pork's odor.
- Add the water, bay leaves, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes or until the pork is tender.
- Pour in the pork blood and stir well to combine. Simmer for another 10 minutes.
- Add the green chili peppers and fish sauce. Adjust the seasoning according to your taste.
- Simmer for another 10 minutes to allow the flavors to meld together.
- Serve hot with steamed rice.
