Devonshire Cream Tea
A traditional English treat, Devonshire cream tea is a delightful combination of scones, clotted cream, and strawberry jam, served with a pot of tea.
Ingredients - Serves 4
- Boiling water - 1 liter
- Tea bags - 4
- Strawberry jam - 1 pot
- Clotted cream - 1 pot
- Milk - 150ml
- Sugar - 40g
- Butter - 75g, cold
- Self-raising flour - 225g
Let's Get Started
- Preheat the oven to 220°C (200°C fan) mark 7.
- Put the flour into a large bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
- Stir in the sugar, then quickly stir in the milk to get a soft dough.
- Turn out onto a lightly floured work surface, knead lightly and roll out to a 2cm (3⁄4in) thickness. Cut out rounds using a 5.5cm (21⁄4in) cutter.
- Place on a baking sheet and bake for 10-12min until risen and golden.
- Meanwhile, make the tea by placing the tea bags in a teapot and pouring over the boiling water. Leave to brew for 2-3min.
- Serve the warm scones with the clotted cream and strawberry jam, along with the pot of tea.
