Let's Get Started

  1. Preheat the oven to 180°C (350°F) and grease a square cake tin.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Combine the flour and baking powder, then gradually add to the butter mixture, alternating with the milk.
  5. Pour the batter into the prepared tin and smooth the top.
  6. Bake for 25 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
  7. To make the icing, combine the cocoa powder and boiling water in a bowl, then stir in the icing sugar until smooth.
  8. Cut the cooled cake into squares. Dip each square into the icing, then roll in the desiccated coconut to coat.
  9. Place the lamingtons on a wire rack to set before serving.
