Lamington Cake
Lamington Cake is a classic Australian dessert made of squares of sponge cake coated in chocolate and desiccated coconut.
Ingredients - Serves 12
- Desiccated coconut - 2 cups
- Icing sugar - 2 cups
- Boiling water - 1/2 cup
- Unsweetened cocoa powder - 1/4 cup
- Milk - 1/2 cup
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Sugar - 1 cup
- Butter - 1/2 cup, softened
Let's Get Started
- Preheat the oven to 180°C (350°F) and grease a square cake tin.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Combine the flour and baking powder, then gradually add to the butter mixture, alternating with the milk.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 25 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
- To make the icing, combine the cocoa powder and boiling water in a bowl, then stir in the icing sugar until smooth.
- Cut the cooled cake into squares. Dip each square into the icing, then roll in the desiccated coconut to coat.
- Place the lamingtons on a wire rack to set before serving.
