Anzac Biscuits
Anzac biscuits are a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter, golden syrup, baking soda, boiling water, and desiccated coconut.
Ingredients - Serves 24
- Desiccated coconut - 1 cup
- Boiling water - 2 tablespoons
- Baking soda - 1 teaspoon
- Golden syrup - 2 tablespoons
- Butter - 125g
- Sugar - 1 cup
- Plain flour - 1 cup
- Rolled oats - 1 cup
Let's Get Started
- Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
- In a large bowl, combine oats, flour, sugar and coconut.
- In a saucepan, melt the butter and golden syrup over low heat. Mix the baking soda with boiling water and add to the butter and syrup mixture.
- Pour the liquids into the dry ingredients and mix well.
- Spoon dollops of mixture, about 1 tablespoon in size, onto lined baking trays and press down to flatten slightly. Make sure to leave plenty of room for the biscuits to spread while cooking.
- Bake for 15-20 minutes or until golden brown.
- Leave biscuits on the trays for 5 minutes, then transfer to a wire rack to cool.
