- Orange zest - 1 tablespoon
- Bay leaf - 1
- Herbes de provence - 1 tablespoon
- Tomato paste - 2 tablespoons
- Beef broth - 2 cups
- Red wine - 2 cups
- Garlic - 4 cloves, minced
- Carrots - 2, chopped
- Onions - 2, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef chuck - 2 pounds, cut into 2-inch cubes

- Season the beef with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onions, carrots, and garlic. Cook until the vegetables are softened.
- Add the red wine to the pot and scrape the bottom to loosen any browned bits.
- Add the beef broth, tomato paste, Herbes de Provence, bay leaf, and orange zest. Bring to a simmer.
- Return the beef to the pot. Cover and simmer for 2-3 hours, until the beef is tender.
