  1. Season the beef with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the onions, carrots, and garlic. Cook until the vegetables are softened.
  4. Add the red wine to the pot and scrape the bottom to loosen any browned bits.
  5. Add the beef broth, tomato paste, Herbes de Provence, bay leaf, and orange zest. Bring to a simmer.
  6. Return the beef to the pot. Cover and simmer for 2-3 hours, until the beef is tender.
  7. Remove the bay leaf before serving. Enjoy your Daube Provençale with crusty bread or mashed potatoes.
