Pork Tenderloin with Cranberry Sauce

Ingredients - Serves 4
- Orange juice - 1/2 cup
- Orange zest - 1 tablespoon
- Sugar - 1 cup
- Cranberries - 2 cups, fresh or frozen
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork tenderloin - 1.5 pounds
Let's Get Started
- Preheat the oven to 375°F.
- Season the pork tenderloin with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the pork and cook until browned on all sides, about 10 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook until softened, about 5 minutes.
- Add the cranberries, sugar, orange zest, and orange juice. Bring to a boil, then reduce the heat and simmer until the cranberries burst and the sauce thickens, about 15 minutes.
- Return the pork to the skillet and spoon some of the cranberry sauce over it.
- Transfer the skillet to the oven and roast until the pork is cooked through, about 20 minutes.
- Let the pork rest for a few minutes before slicing. Serve with the cranberry sauce.
