Pork Tenderloin with Cranberry Sauce

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the pork and cook until browned on all sides, about 10 minutes.
  4. Remove the pork from the skillet and set aside.
  5. In the same skillet, add the onion and garlic and cook until softened, about 5 minutes.
  6. Add the cranberries, sugar, orange zest, and orange juice. Bring to a boil, then reduce the heat and simmer until the cranberries burst and the sauce thickens, about 15 minutes.
  7. Return the pork to the skillet and spoon some of the cranberry sauce over it.
  8. Transfer the skillet to the oven and roast until the pork is cooked through, about 20 minutes.
  9. Let the pork rest for a few minutes before slicing. Serve with the cranberry sauce.
