  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion and garlic and cook until soft and translucent.
  3. Add the tomatoes and cook until they start to break down.
  4. Add the mixed seafood and cook until it starts to turn opaque.
  5. Pour in the fish stock and bring to a boil.
  6. Season with salt and pepper and let simmer for about 20 minutes.
  7. In a separate bowl, pour the hot fish stock over the couscous and cover. Let it sit for about 10 minutes, or until the couscous has absorbed all the liquid.
  8. Fluff the couscous with a fork and mix in the chopped parsley.
  9. Serve the couscous with the seafood and tomato sauce on top.
