Cuscus Alla Trapanese

Ingredients - Serves 4
- Parsley - A handful, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Tomatoes - 4, chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Mixed seafood - 1 kg
- Fish stock - 4 cups
- Couscous - 2 cups
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and cook until soft and translucent.
- Add the tomatoes and cook until they start to break down.
- Add the mixed seafood and cook until it starts to turn opaque.
- Pour in the fish stock and bring to a boil.
- Season with salt and pepper and let simmer for about 20 minutes.
- In a separate bowl, pour the hot fish stock over the couscous and cover. Let it sit for about 10 minutes, or until the couscous has absorbed all the liquid.
- Fluff the couscous with a fork and mix in the chopped parsley.
- Serve the couscous with the seafood and tomato sauce on top.
