Curry Beef Stir Fry
This flavorful curry beef stir fry is made with tender beef, colorful vegetables, and aromatic spices.
Ingredients - Serves 4
- Cooked rice - 4 cups
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Coconut milk - 1/2 cup
- Broccoli florets - 2 cups
- Carrots - 2, julienned
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Vegetable oil - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Soy sauce - 2 tablespoons
- Curry powder - 2 tablespoons
- Beef sirloin - 1 pound, thinly sliced
Let's Get Started
- In a bowl, combine the sliced beef, curry powder, soy sauce, minced garlic, and grated ginger. Mix well and let it marinate for 10 minutes.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the marinated beef and stir fry for 2-3 minutes, until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, julienned carrots, and broccoli florets. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.

- Cook for an additional 2-3 minutes, until the sauce has thickened slightly and the flavors have melded together.
- Remove from heat and sprinkle with fresh chopped cilantro.
