Curried Red Lentil Dahl

Ingredients - Serves 4
- Fresh cilantro - For garnish
- Tomatoes - 2, chopped
- Curry powder - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Vegetable oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Water - 3 cups
- Red lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water until the water runs clear.
- In a large pot, combine the lentils, water, turmeric, and salt. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are soft.
- While the lentils are cooking, heat the oil in a frying pan over medium heat. Add the onion and garlic and cook until the onion is soft and golden.
- Add the curry powder to the onion and garlic and cook for another minute.
- Add the tomatoes to the pan and cook for a few minutes, until the tomatoes are soft.
- Stir the onion, garlic, and tomato mixture into the lentils.
- Serve the dahl garnished with fresh cilantro.
