Curried Parsnip Soup

Ingredients - Serves 6
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Lime juice - 2 tablespoons
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Curry powder - 2 teaspoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Parsnips - 1.5 lbs, peeled and chopped
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the curry powder and stir for a minute to release its flavors.
