Cu Kieu Xao Tom
Cá Kho Tộ is a traditional Vietnamese dish made with caramelized catfish in a clay pot.
Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Green onions - 2, chopped
- Water - 1 cup
- Black pepper - 1/2 teaspoon
- Shallots - 2, thinly sliced
- Garlic - 4 cloves, minced
- Sugar - 2 tablespoons
- Fish sauce - 3 tablespoons
- Catfish fillets - 4 fillets
Let's Get Started
- In a small bowl, mix together fish sauce, sugar, minced garlic, and black pepper.
- Marinate the catfish fillets in the mixture for 15 minutes.
- Heat cooking oil in a clay pot or a deep skillet over medium heat.
- Add the sliced shallots and cook until fragrant.
- Place the marinated catfish fillets in the pot and cook for 5 minutes on each side, until slightly browned.
- Pour in the water and bring to a simmer.
- Cover the pot and let it simmer for 30 minutes, until the catfish is tender and the sauce has thickened.
- Garnish with chopped green onions and cilantro before serving.
- Serve hot with steamed rice.
