Crystal Prawn
Crystal Prawn is a classic Chinese dish that features succulent prawns in a sweet and tangy sauce.
Ingredients - Serves 4
- Green onions - 2, chopped
- Chicken broth - 1/2 cup
- Vinegar - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- White wine - 2 tablespoons
- Ginger - 1 inch piece, minced
- Garlic - 2 cloves, minced
- Vegetable oil - For frying
- White pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Egg white - 1
- Cornstarch - 2 tablespoons
- Prawns - 500 grams, peeled and deveined
Let's Get Started
- In a bowl, combine prawns, cornstarch, egg white, salt, and white pepper. Mix well and set aside for 15 minutes.
- Heat oil in a wok or large frying pan over medium-high heat. Add prawns and fry until they turn pink, about 2-3 minutes. Remove prawns and set aside.
- In the same wok, add garlic and ginger and stir-fry until fragrant.
- Add white wine, soy sauce, sugar, vinegar, and chicken broth. Bring to a boil.
- Return the prawns to the wok and stir-fry for another 2 minutes, or until the prawns are coated with the sauce.
- Garnish with chopped green onions and serve.
