Let's Get Started

  1. Preheat the oven to 400°F.
  2. In a small saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring, for 1 minute.
  3. Gradually whisk in the milk and cook, whisking constantly, until the sauce is thickened, about 5 minutes. Remove from the heat and stir in the nutmeg, salt, pepper, and 1/2 cup of the cheese.
  4. Spread one side of each slice of bread with the remaining butter. Spread the other side of 4 slices with the mustard. Top the mustard side with the ham and the remaining cheese, then top with the remaining bread slices, butter side up.
  5. Heat a large skillet over medium heat. Add the sandwiches and cook until golden on both sides, about 5 minutes per side.
  6. Transfer the sandwiches to a baking sheet. Spread the tops with the bechamel sauce and sprinkle with the remaining cheese.
  7. Bake until the cheese is melted and bubbly, about 10 minutes.
