Let's Get Started

  1. Preheat the oven to 375°F.
  2. Slice the pork tenderloin lengthwise, but not all the way through, so you can open it like a book.
  3. Place a slice of ham and a slice of Swiss cheese on one side of the pork, then fold the other side over to enclose the filling.
  4. Season the outside of the pork with salt and pepper, then dredge in the flour, dip in the beaten eggs, and coat in the breadcrumbs.
  5. Heat the butter and olive oil in a large oven-safe skillet over medium heat.
  6. Add the pork and cook until golden brown on all sides, about 10 minutes.
  7. Transfer the skillet to the oven and bake for 25-30 minutes, or until the pork is cooked through.
  8. Let the pork rest for a few minutes before slicing and serving.
