Pork Tenderloin Cordon Bleu
A delicious twist on the classic Chicken Cordon Bleu, using pork tenderloin stuffed with ham and Swiss cheese.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Breadcrumbs - 1 cup
- Eggs - 2, beaten
- Flour - 1/2 cup
- Salt and pepper - To taste
- Swiss cheese - 4 slices
- Ham - 4 slices
- Pork tenderloin - 1, about 1 pound
Let's Get Started
- Preheat the oven to 375°F.
- Slice the pork tenderloin lengthwise, but not all the way through, so you can open it like a book.
- Place a slice of ham and a slice of Swiss cheese on one side of the pork, then fold the other side over to enclose the filling.
- Season the outside of the pork with salt and pepper, then dredge in the flour, dip in the beaten eggs, and coat in the breadcrumbs.
- Heat the butter and olive oil in a large oven-safe skillet over medium heat.
- Add the pork and cook until golden brown on all sides, about 10 minutes.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the pork is cooked through.
- Let the pork rest for a few minutes before slicing and serving.
