Crispy Skin Salmon with Stir Fried Rice
This recipe features perfectly crispy skin salmon served with flavorful stir-fried rice.
Ingredients - Serves 2
- Green onions - 2, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Frozen mixed vegetables - 1 cup
- Cooked rice - 2 cups, chilled
- Olive oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Salmon fillets - 2, skin-on
Let's Get Started
- Season the salmon fillets with salt and black pepper on both sides.
- Heat olive oil in a non-stick skillet over medium-high heat.
- Place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy and golden.
- Flip the salmon fillets and cook for an additional 2-3 minutes until cooked through. Remove from heat and set aside.
- In the same skillet, add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
- Add the frozen mixed vegetables and stir-fry for 2-3 minutes until heated through.
- Add the chilled cooked rice to the skillet and stir-fry for 3-4 minutes until well combined and heated.
- Drizzle soy sauce and sesame oil over the stir-fried rice. Stir well to coat.
- Add chopped green onions and cook for an additional 1 minute.
- Serve the crispy skin salmon on top of the stir-fried rice. Enjoy!
