Crispy Skin Salmon with Stir Fried Rice

  1. Season the salmon fillets with salt and black pepper on both sides.
  2. Heat olive oil in a non-stick skillet over medium-high heat.
  3. Place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy and golden.
  4. Flip the salmon fillets and cook for an additional 2-3 minutes until cooked through. Remove from heat and set aside.
  5. In the same skillet, add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  6. Add the frozen mixed vegetables and stir-fry for 2-3 minutes until heated through.
  7. Add the chilled cooked rice to the skillet and stir-fry for 3-4 minutes until well combined and heated.
  8. Drizzle soy sauce and sesame oil over the stir-fried rice. Stir well to coat.
  9. Add chopped green onions and cook for an additional 1 minute.
