  1. In a large pot, combine water, salt, peppercorns, garlic, soy sauce, and vinegar. Bring to a boil.
  2. Add the pork leg to the pot and simmer for 1.5 to 2 hours, or until the meat is tender.
  3. Remove the pork leg from the pot and let it cool for a few minutes.
  4. Heat oil in a deep fryer or large pot to 375°F (190°C).
  5. Carefully lower the pork leg into the hot oil and deep fry for about 10-15 minutes, or until the skin is crispy and golden brown.
  6. Remove the crispy pata from the oil and let it drain on a wire rack or paper towels.
  7. Serve the crispy pata with steamed rice and dipping sauce.
