Crispy Pata

- Vinegar - 1/4 cup
- Soy sauce - 1/4 cup

- Water - 8 cups
- Pork leg - 1 whole, about 4-5 pounds
Let's Get Started
- In a large pot, combine water, salt, peppercorns, garlic, soy sauce, and vinegar. Bring to a boil.
- Add the pork leg to the pot and simmer for 1.5 to 2 hours, or until the meat is tender.
- Remove the pork leg from the pot and let it cool for a few minutes.
- Heat oil in a deep fryer or large pot to 375°F (190°C).
- Carefully lower the pork leg into the hot oil and deep fry for about 10-15 minutes, or until the skin is crispy and golden brown.
- Remove the crispy pata from the oil and let it drain on a wire rack or paper towels.
- Serve the crispy pata with steamed rice and dipping sauce.
