Creole Cream Cheese
Creole Cream Cheese is a form of farmer cheese that is traditional in the New Orleans area. It has a rich, unique flavor that is slightly tart and it's often eaten as a dessert with cream, sugar, and fruit.

- Fresh fruit - For serving
- Sugar - 1 cup
- Salt - 1 teaspoon
- Rennet - 1/4 tablet
- Buttermilk - 1 quart
- Whole milk - 1 gallon
Let's Get Started
- In a large pot, heat the milk to 85°F. Remove from heat.
- Dissolve the rennet in a little water and add to the milk along with the buttermilk. Stir well.
- Cover the pot and let it sit at room temperature for 24 hours.
- After 24 hours, the milk should have formed a curd. Cut the curd into cubes and then stir gently.
- Line a colander with cheesecloth and pour the curds into it. Let it drain for several hours or until it reaches the desired consistency.
- Once drained, mix in the salt and sugar. The Creole Cream Cheese is now ready to eat.
- Serve with a drizzle of cream, a sprinkle of sugar, and fresh fruit.
