  1. In a large pot, heat the milk to 85°F. Remove from heat.
  2. Dissolve the rennet in a little water and add to the milk along with the buttermilk. Stir well.
  3. Cover the pot and let it sit at room temperature for 24 hours.
  4. After 24 hours, the milk should have formed a curd. Cut the curd into cubes and then stir gently.
  5. Line a colander with cheesecloth and pour the curds into it. Let it drain for several hours or until it reaches the desired consistency.
  6. Once drained, mix in the salt and sugar. The Creole Cream Cheese is now ready to eat.
  7. Serve with a drizzle of cream, a sprinkle of sugar, and fresh fruit.
