Creamy Cauliflower Gratin
This creamy cauliflower gratin is a perfect side dish that is rich, cheesy, and deliciously comforting.
Ingredients - Serves 6
- Breadcrumbs - 1/2 cup
- Parmesan cheese - 1/2 cup, grated
- Cheddar cheese - 1 cup, grated
- Nutmeg - 1/4 teaspoon
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Milk - 1 cup
- All-purpose flour - 2 tablespoons
- Butter - 2 tablespoons
- Cauliflower - 1 large head, cut into florets
Let's Get Started
- Preheat the oven to 375°F.
- Boil the cauliflower florets in a large pot of salted water until tender, about 5 minutes. Drain well.
- In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk and cream. Cook, stirring constantly, until the sauce thickens. Season with salt, pepper, and nutmeg.
- Remove the pot from the heat and stir in the cheddar and half of the Parmesan.
- Add the drained cauliflower to the pot and stir to coat with the sauce.
- Transfer the cauliflower mixture to a baking dish. Sprinkle with the breadcrumbs and the remaining Parmesan.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
