Creamy Cauliflower Gratin

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Boil the cauliflower florets in a large pot of salted water until tender, about 5 minutes. Drain well.
  3. In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk and cream. Cook, stirring constantly, until the sauce thickens. Season with salt, pepper, and nutmeg.
  5. Remove the pot from the heat and stir in the cheddar and half of the Parmesan.
  6. Add the drained cauliflower to the pot and stir to coat with the sauce.
  7. Transfer the cauliflower mixture to a baking dish. Sprinkle with the breadcrumbs and the remaining Parmesan.
  8. Bake for 20-25 minutes, or until the top is golden and bubbly.
