Coxinha de Frango
Coxinha de Frango is a popular Brazilian chicken croquette that is shaped like a chicken drumstick and contains a creamy chicken salad filling.
Ingredients - Serves 20
- Vegetable oil - For frying
- Salt and pepper - To taste
- Cream cheese - 1/2 cup
- Breadcrumbs - 2 cups
- Eggs - 2
- Flour - 2 cups
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a large pot, combine the chicken breasts, onion, garlic, and chicken broth. Bring to a boil, then reduce the heat and simmer until the chicken is cooked through, about 20 minutes.
- Remove the chicken from the pot and let it cool. Reserve the broth.
- Once the chicken is cool, shred it and mix it with the cream cheese. Season with salt and pepper.
- In a separate pot, bring the reserved broth to a boil. Gradually whisk in the flour until the mixture is smooth and thick.
- Let the dough cool, then divide it into 20 pieces. Flatten each piece and place a spoonful of the chicken mixture in the center. Fold the dough over the filling and shape it into a drumstick.
- Dip each coxinha in the beaten eggs, then roll in the breadcrumbs.
- Heat the vegetable oil in a deep fryer or large pot to 375°F. Fry the coxinhas until they are golden brown, about 5 minutes. Drain on paper towels before serving.
