  1. In a large pot, combine the chicken breasts, onion, garlic, and chicken broth. Bring to a boil, then reduce the heat and simmer until the chicken is cooked through, about 20 minutes.
  2. Remove the chicken from the pot and let it cool. Reserve the broth.
  3. Once the chicken is cool, shred it and mix it with the cream cheese. Season with salt and pepper.
  4. In a separate pot, bring the reserved broth to a boil. Gradually whisk in the flour until the mixture is smooth and thick.
  5. Let the dough cool, then divide it into 20 pieces. Flatten each piece and place a spoonful of the chicken mixture in the center. Fold the dough over the filling and shape it into a drumstick.
  6. Dip each coxinha in the beaten eggs, then roll in the breadcrumbs.
  7. Heat the vegetable oil in a deep fryer or large pot to 375°F. Fry the coxinhas until they are golden brown, about 5 minutes. Drain on paper towels before serving.
