Corn and Jalapeño Dip
This creamy, spicy, and sweet corn and jalapeño dip is the perfect appetizer for any gathering.
Ingredients - Serves 6
- Green onions - 2, thinly sliced
- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Sour cream - 1/2 cup
- Cream cheese - 8 ounces, softened
- Jalapeño - 1, seeded and finely chopped
- Fresh corn kernels - 2 cups
- Butter - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, melt the butter over medium heat. Add the corn and jalapeño and cook until the corn is golden, about 5 minutes.
- In a large bowl, combine the cream cheese, sour cream, half of the cheddar cheese, the corn and jalapeño mixture, salt, and pepper. Stir until well combined.
- Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- Top with the sliced green onions before serving.
