  1. Preheat your oven to 180°C (350°F).
  2. Rub the leg of lamb with the minced garlic, making sure to get it into all the nooks and crannies.
  3. Place the rosemary sprigs on top of the lamb.
  4. Drizzle the olive oil over the lamb, and season it with the salt and pepper.
  5. Place the lamb in a roasting pan, and pour the white wine into the bottom of the pan.
  6. Roast the lamb in the preheated oven for about 2 hours, or until it's cooked to your desired level of doneness.
  7. Let the lamb rest for a few minutes before carving and serving.
