Cocido Madrileño is a traditional Spanish stew made with various meats, vegetables, and chickpeas.
Ingredients - Serves 6
- Salt and pepper - To taste
- Smoked paprika - 1 teaspoon
- Bay leaf - 2
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Cabbage - 1/2 head, chopped
- Carrots - 2, peeled and chopped
- Potatoes - 2, peeled and quartered
- Chorizo sausage - 2 links
- Pork belly - 8 oz
- Chicken thighs - 4
- Beef shank - 1 lb
- Chickpeas - 1 cup, soaked overnight
Let's Get Started
- In a large pot, add the soaked chickpeas, beef shank, chicken thighs, pork belly, and chorizo sausage.
- Cover with water and bring to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to low and simmer for 1 hour.
- Add the potatoes, carrots, cabbage, onion, garlic, bay leaf, smoked paprika, salt, and pepper.
- Continue to simmer for another 1-2 hours, or until the meats are tender and the flavors have melded together.
- Remove the meats from the pot and slice them into serving portions.
- Serve the cocido madrileño in bowls, with the meats, vegetables, and broth.
