Ingredients - Serves 4

Let's Get Started

  1. Heat a skillet over medium heat and cook the chorizo sausage until browned and cooked through, about 8-10 minutes.
  2. Remove the chorizo from the skillet and set aside.
  3. In the same skillet, sauté the onion, bell pepper, and garlic until softened, about 5 minutes.
  4. Add the cooked chorizo back to the skillet and stir to combine.
  5. Warm the corn tortillas in a separate skillet or in the oven.
  6. To assemble the tacos, place a spoonful of the chorizo mixture onto each tortilla.
  7. Top with chopped cilantro, a squeeze of lime juice, a sprinkle of salt and pepper, salsa, and sliced avocado.
  8. Serve immediately and enjoy!
