Chorizo
These flavorful chorizo tacos are made with spicy Mexican sausage, fresh vegetables, and a tangy salsa.
Ingredients - Serves 4
- Avocado - 1, sliced
- Salsa - 1/2 cup
- Salt and pepper - To taste
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1, thinly sliced
- Onion - 1, thinly sliced
- Corn tortillas - 8
- Chorizo sausage - 1 pound
Let's Get Started
- Heat a skillet over medium heat and cook the chorizo sausage until browned and cooked through, about 8-10 minutes.
- Remove the chorizo from the skillet and set aside.
- In the same skillet, sauté the onion, bell pepper, and garlic until softened, about 5 minutes.
- Add the cooked chorizo back to the skillet and stir to combine.
- Warm the corn tortillas in a separate skillet or in the oven.
- To assemble the tacos, place a spoonful of the chorizo mixture onto each tortilla.
- Top with chopped cilantro, a squeeze of lime juice, a sprinkle of salt and pepper, salsa, and sliced avocado.
