Chorba
Chorba is a traditional Algerian soup made with lamb, vegetables, and aromatic spices.
Ingredients - Serves 6
- Water - 6 cups
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Parsley - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Chickpeas - 1 cup, cooked
- Tomatoes - 2, chopped
- Potatoes - 2, diced
- Carrots - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Lamb meat - 500 grams, cubed
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the cubed lamb meat and cook until browned on all sides.
- Add the diced carrots, potatoes, and chopped tomatoes. Stir well.
- Add the cooked chickpeas, chopped cilantro, and parsley. Mix everything together.
- In a small bowl, combine the turmeric, cumin, paprika, cayenne pepper, salt, and pepper. Mix well.
- Sprinkle the spice mixture over the ingredients in the pot. Stir to coat everything evenly.
- Pour in the water and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let the chorba simmer for about 45 minutes, or until the lamb is tender and the vegetables are cooked through.
- Taste and adjust the seasoning if needed.
- Serve hot and enjoy!
