Chilled Pea Soup with Dungeness Crab

Ingredients - Serves 4
- Olive oil - 1 tablespoon
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Mint leaves - 1/4 cup, fresh
- Dungeness crab meat - 1 cup, cooked and cleaned
- Chicken broth - 4 cups
- Peas - 2 cups, fresh or frozen
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the peas and cook until they are tender, about 5 minutes.
- Remove from heat and let cool slightly.
