Chickpea Salad Sandwich
A healthy and delicious sandwich made with mashed chickpeas, veggies, and a creamy dressing.
Ingredients - Serves 4
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Bread - 8 slices
- Salt and pepper - To taste
- Lemon juice - 1 tablespoon
- Dijon mustard - 1 tablespoon
- Mayonnaise - 1/4 cup
- Red onion - 1/4, finely chopped
- Celery - 2 stalks, finely chopped
- Canned chickpeas - 1 can (15 ounces), drained and rinsed
Let's Get Started
- In a large bowl, mash the chickpeas with a fork until they are mostly broken up.
- Add the celery, onion, mayonnaise, mustard, lemon juice, salt, and pepper. Stir until well combined.
- Spread the chickpea salad onto 4 slices of bread.
- Top each with a lettuce leaf and a few slices of tomato.
- Cover with the remaining slices of bread.
- Cut each sandwich in half and serve.
