Let's Get Started

  1. In a large bowl, mash the chickpeas with a fork until they are mostly broken up.
  2. Add the celery, onion, mayonnaise, mustard, lemon juice, salt, and pepper. Stir until well combined.
  3. Spread the chickpea salad onto 4 slices of bread.
  4. Top each with a lettuce leaf and a few slices of tomato.
  5. Cover with the remaining slices of bread.
  6. Cut each sandwich in half and serve.
