  1. In a large bowl, combine the chicken thighs, lime juice, salt, and pepper. Let marinate for 15 minutes.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion, red bell pepper, garlic, and ginger. Cook until the vegetables are softened, about 5 minutes.
  4. Add the peanut butter and coconut milk to the skillet. Stir until well combined and the peanut butter is melted.
  5. Return the chicken thighs to the skillet and simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Stir in the chopped cilantro and adjust the seasoning with salt and pepper, if needed.
  7. Serve the Chicken Xim Xim over cooked rice.
