Chicken Xim Xim
Chicken Xim Xim is a traditional Brazilian dish made with chicken, peanuts, coconut milk, and spices.
Ingredients - Serves 4
- Rice - 2 cups, cooked
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Red bell pepper - 1, diced
- Coconut milk - 1 can (400ml)
- Peanut butter - 1/2 cup
- Chicken thighs - 4, boneless and skinless
Let's Get Started
- In a large bowl, combine the chicken thighs, lime juice, salt, and pepper. Let marinate for 15 minutes.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, red bell pepper, garlic, and ginger. Cook until the vegetables are softened, about 5 minutes.
- Add the peanut butter and coconut milk to the skillet. Stir until well combined and the peanut butter is melted.
- Return the chicken thighs to the skillet and simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in the chopped cilantro and adjust the seasoning with salt and pepper, if needed.
- Serve the Chicken Xim Xim over cooked rice.
