Chicken Tajine
This Moroccan dish is a flavorful and aromatic stew made with chicken, vegetables, and spices.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Chicken broth - 2 cups
- Lemon - 1, sliced
- Green olives - 1/2 cup, pitted
- Potatoes - 2, peeled and cubed
- Carrots - 4, peeled and sliced
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Chicken thighs - 4, bone-in
Let's Get Started
- Heat some oil in a tajine or a large pot over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5 minutes per side. Remove from the pot and set aside.
- Add the onion, garlic, and ginger to the pot and cook until the onion is translucent, about 5 minutes.
- Add the cumin, coriander, cinnamon, turmeric, paprika, salt, and pepper. Cook for 1-2 minutes, or until fragrant.
- Add the carrots, potatoes, olives, and lemon slices to the pot. Stir to combine.
- Place the chicken on top of the vegetables.
- Pour the chicken broth over the chicken and vegetables.
- Cover the pot and simmer over low heat for 45 minutes to 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Sprinkle with chopped cilantro before serving.
