Chicken Tajine

Chicken Tajine

Ingredients - Serves 4

Let's Get Started

  1. Heat some oil in a tajine or a large pot over medium-high heat.
  2. Add the chicken and cook until browned on all sides, about 5 minutes per side. Remove from the pot and set aside.
  3. Add the onion, garlic, and ginger to the pot and cook until the onion is translucent, about 5 minutes.
  4. Add the cumin, coriander, cinnamon, turmeric, paprika, salt, and pepper. Cook for 1-2 minutes, or until fragrant.
  5. Add the carrots, potatoes, olives, and lemon slices to the pot. Stir to combine.
  6. Place the chicken on top of the vegetables.
  7. Pour the chicken broth over the chicken and vegetables.
  8. Cover the pot and simmer over low heat for 45 minutes to 1 hour, or until the chicken is cooked through and the vegetables are tender.
  9. Sprinkle with chopped cilantro before serving.
