Ingredients - Serves 4
- Pita bread - 4
- Fresh parsley - 1/4 cup, chopped
- Red onion - 1/2, thinly sliced
- Tomato - 1, diced
- Cucumber - 1, thinly sliced
- Greek yogurt - 1/2 cup
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper to make the marinade.
- Slice the chicken breasts into thin strips and add them to the marinade. Toss to coat the chicken evenly. Let it marinate for at least 30 minutes, or overnight for best results.
- Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken for about 6-8 minutes per side, or until cooked through and slightly charred. Remove from heat and let it rest for a few minutes.
- In a small bowl, mix the Greek yogurt with a squeeze of lemon juice and a pinch of salt. This will be the yogurt sauce for the wraps.
- Warm the pita bread in a toaster or on a grill for a few seconds on each side.
- To assemble the wraps, spread a spoonful of the yogurt sauce on each pita bread. Top with grilled chicken, cucumber slices, diced tomatoes, sliced red onions, and chopped fresh parsley.
- Fold the pita bread in half and serve the chicken shawarma pita wraps immediately.
