Chicken Satay
This is a traditional grilled chicken skewer dish from Southeast Asia served with a peanut sauce.
Ingredients - Serves 4
- Bamboo skewers - 8
- Coconut milk - 1/2 cup
- Peanut butter - 1/2 cup
- Curry powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Brown sugar - 1 tablespoon
- Lemon juice - 2 tablespoons
- Soy sauce - 1/4 cup
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Cut the chicken into thin strips and place in a bowl.
- In a separate bowl, mix together the soy sauce, lemon juice, brown sugar, garlic, and curry powder. Pour over the chicken and marinate for at least 1 hour.
- Soak the bamboo skewers in water for 30 minutes to prevent them from burning.
- Preheat a grill or grill pan to medium heat.
- Thread the chicken onto the skewers and grill for 5-7 minutes on each side, or until cooked through.
- While the chicken is grilling, make the peanut sauce by combining the peanut butter and coconut milk in a small saucepan. Heat over low heat, stirring constantly, until smooth and heated through.
- Serve the chicken satay with the peanut sauce for dipping.
