Chicken Fricot
Chicken fricot is a traditional Acadian chicken stew made with chicken, vegetables, and dumplings.
Ingredients - Serves 6
- Dumplings - 1 cup
- Water - 4 cups
- Flour - 1/4 cup
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Celery - 2 stalks, sliced
- Potatoes - 3 medium, diced
- Carrots - 3 medium, sliced
- Onion - 1 large, chopped
- Chicken - 1 whole, cut into pieces
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chicken pieces and cook until browned on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, sliced carrots, diced potatoes, and sliced celery. Cook for a few minutes until the vegetables start to soften.
- Add the bay leaf, thyme, salt, and pepper. Stir to combine.
- Sprinkle the flour over the vegetables and stir well to coat.
- Gradually add the water, stirring constantly to avoid lumps.
- Return the chicken to the pot and bring the mixture to a boil.
- Reduce the heat, cover the pot, and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Meanwhile, prepare the dumplings according to the package instructions.
- Once the chicken and vegetables are cooked, remove the bay leaf and discard.
- Add the cooked dumplings to the pot and stir gently to combine.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve hot and enjoy!
