Ingredients - Serves 6

  1. In a large pot, heat some oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Remove the chicken from the pot and set aside.
  4. In the same pot, add the chopped onion, sliced carrots, diced potatoes, and sliced celery. Cook for a few minutes until the vegetables start to soften.
  5. Add the bay leaf, thyme, salt, and pepper. Stir to combine.
  6. Sprinkle the flour over the vegetables and stir well to coat.
  7. Gradually add the water, stirring constantly to avoid lumps.
  8. Return the chicken to the pot and bring the mixture to a boil.
  9. Reduce the heat, cover the pot, and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  10. Meanwhile, prepare the dumplings according to the package instructions.
  11. Once the chicken and vegetables are cooked, remove the bay leaf and discard.
  12. Add the cooked dumplings to the pot and stir gently to combine.
  13. Simmer for an additional 5 minutes to allow the flavors to meld together.
  14. Serve hot and enjoy!
