Chicken Fricassee with Tarragon
This is a classic French dish where chicken is cooked in a creamy sauce with tarragon.
Ingredients - Serves 4
- Heavy cream - 1/2 cup
- Tarragon - 2 tablespoons, chopped
- White wine - 1/2 cup
- Chicken broth - 2 cups
- Flour - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Chicken pieces - 8 pieces
Let's Get Started
- Season the chicken pieces with salt and pepper.
- Melt the butter in a large skillet over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken and set aside.
- In the same skillet, add the onion and garlic and cook until softened.
- Stir in the flour and cook for 1 minute.
- Slowly whisk in the chicken broth and wine. Bring to a simmer.
- Return the chicken to the skillet, cover, and simmer for 30 minutes.
- Stir in the tarragon and heavy cream. Cook for an additional 10 minutes, until the sauce is thickened.
- Serve the chicken fricassee with a side of your choice.
