Chicken and Quinoa Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until the vegetables are soft, about 5 minutes.
  3. Add the chicken breasts and cook until they are no longer pink in the middle, about 10 minutes.
  4. Add the quinoa and chicken broth and bring to a boil.
  5. Reduce the heat and simmer until the quinoa is cooked, about 15 minutes.
  6. Season with salt and pepper and stir in the chopped parsley.
  7. Serve the soup hot.
