Chicken and Quinoa Soup
A hearty and healthy soup with chicken, vegetables, and quinoa.
Ingredients - Serves 4
- Parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Chicken broth - 4 cups
- Quinoa - 1 cup
- Chicken breasts - 2, boneless and skinless
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery and cook until the vegetables are soft, about 5 minutes.
- Add the chicken breasts and cook until they are no longer pink in the middle, about 10 minutes.
- Add the quinoa and chicken broth and bring to a boil.
- Reduce the heat and simmer until the quinoa is cooked, about 15 minutes.
- Season with salt and pepper and stir in the chopped parsley.
- Serve the soup hot.
