Chicken and Cashew Fried Rice
This delicious fried rice is made with chicken, cashews, and a variety of vegetables.
Ingredients - Serves 4
- Egg - 1, beaten
- Green onions - 2, thinly sliced
- Cashews - 1/2 cup, chopped
- Peas - 1 cup, frozen
- Carrots - 2, peeled and diced
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Chicken breast - 2, boneless and skinless, diced
- Cooked white rice - 4 cups
Let's Get Started
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
- Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Add the remaining tablespoon of sesame oil to the skillet.
- Add the garlic and ginger and cook for 1-2 minutes, or until fragrant.
- Add the carrots and peas and cook for 3-4 minutes, or until the vegetables are tender.
- Add the rice, soy sauce, and cashews to the skillet. Stir to combine.
- Push the rice mixture to one side of the skillet and add the beaten egg to the other side.
- Scramble the egg until cooked through, then stir it into the rice mixture.
- Add the cooked chicken and green onions to the skillet. Stir to combine and cook for 1-2 minutes, or until heated through.
