Chicken and Cashew Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
  2. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of sesame oil to the skillet.
  4. Add the garlic and ginger and cook for 1-2 minutes, or until fragrant.
  5. Add the carrots and peas and cook for 3-4 minutes, or until the vegetables are tender.
  6. Add the rice, soy sauce, and cashews to the skillet. Stir to combine.
  7. Push the rice mixture to one side of the skillet and add the beaten egg to the other side.
  8. Scramble the egg until cooked through, then stir it into the rice mixture.
  9. Add the cooked chicken and green onions to the skillet. Stir to combine and cook for 1-2 minutes, or until heated through.
