Chicken and Broccoli Stir Fry
This delicious chicken and broccoli stir fry is a quick and easy weeknight meal packed with flavor.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Chicken broth - 1/2 cup
- Cornstarch - 1 tablespoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Broccoli - 2 cups, florets
- Chicken breast - 2 boneless, skinless breasts, sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and chicken broth. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced chicken breast and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add broccoli florets and cook for 2-3 minutes, until slightly tender.
