Chicken Almondine
Chicken Almondine is a delicious dish featuring chicken breasts topped with a buttery almond sauce.
Ingredients - Serves 4
- Parsley - 1 tablespoon, chopped
- Almonds - 1/2 cup, sliced and toasted
- Lemon juice - 2 tablespoons
- Chicken broth - 1 cup
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Melt the butter in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Add the chicken broth and lemon juice to the skillet, scraping the bottom of the skillet to loosen any browned bits. Bring to a simmer.
- Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.
- Sprinkle the toasted almonds and chopped parsley over the chicken before serving.
