Chicha de Jora
Chicha de Jora is a traditional Andean beverage made from fermented corn. It's a sweet, slightly sour and refreshing drink.
Ingredients - Serves 8
- Cinnamon stick - 1
- Cloves - 5
- Sugar - 500 grams
- Water - 5 liters
- Jora corn - 1 kilogram
Let's Get Started
- Soak the jora corn in water for about 48 hours until it sprouts.
- Drain the corn and let it dry in the sun for about a week.
- Grind the dried corn into a coarse flour.
- Boil the water in a large pot.
- Add the corn flour to the boiling water and stir continuously to prevent lumps from forming.
- Add the sugar, cloves, and cinnamon stick to the pot and stir until the sugar is dissolved.
- Reduce the heat to low and let the mixture simmer for about 8 hours.
- Strain the mixture through a fine mesh sieve to remove the solids.
- Let the liquid cool to room temperature, then refrigerate until chilled.
- Serve the chicha de jora cold.
