  1. Combine the mashed cassava and sweet potatoes in a large bowl.
  2. Add the eggs, sugar, and anise seeds and mix well.
  3. Gradually add the flour, kneading the dough until it is smooth and elastic.
  4. Divide the dough into small pieces and roll each piece into a rope. Shape the ropes into figure eights.
  5. Heat the oil in a deep fryer or large saucepan to 375°F.
  6. Fry the buñuelos in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
  7. In a small saucepan, combine the water, sugar, and cinnamon stick. Bring to a boil, then reduce the heat and simmer until the syrup thickens, about 10 minutes.
  8. Drizzle the syrup over the buñuelos and serve warm.
