Buñuelos Cubanos
Buñuelos Cubanos are a traditional Cuban dessert made from a dough of cassava and sweet potatoes, shaped into a figure eight and deep-fried until golden. They are then drizzled with a sweet anise syrup.
Ingredients - Serves 6
- Cinnamon stick - 1
- Water - 1 cup
- Vegetable oil - For frying
- All-purpose flour - 2 cups
- Anise seeds - 1 teaspoon
- Sugar - 1/2 cup
- Eggs - 2
- Sweet potatoes - 1 cup, boiled and mashed
- Cassava - 1 cup, boiled and mashed
Let's Get Started
- Combine the mashed cassava and sweet potatoes in a large bowl.
- Add the eggs, sugar, and anise seeds and mix well.
- Gradually add the flour, kneading the dough until it is smooth and elastic.
- Divide the dough into small pieces and roll each piece into a rope. Shape the ropes into figure eights.
- Heat the oil in a deep fryer or large saucepan to 375°F.
- Fry the buñuelos in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- In a small saucepan, combine the water, sugar, and cinnamon stick. Bring to a boil, then reduce the heat and simmer until the syrup thickens, about 10 minutes.
- Drizzle the syrup over the buñuelos and serve warm.
