Indian Chicken Biryani

Let's Get Started

  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Heat ghee in a large pot over medium heat. Add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Add the ginger-garlic paste and green chili. Sauté for a minute until the raw smell disappears.
  5. Add the chicken pieces and cook until they are browned on all sides.
  6. Add the chopped tomatoes and cook until they are soft and mushy.
  7. Add the biryani masala powder, turmeric powder, red chili powder, and salt. Mix well to coat the chicken with the spices.
  8. Add the yogurt and mix well. Cook for 5 minutes to allow the flavors to blend together.
  9. Add the soaked and drained basmati rice to the pot. Stir gently to combine with the chicken and spices.
  10. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the flavors have melded together.
  11. Remove from heat and let the biryani rest for 10 minutes.
  12. Garnish with chopped fresh coriander leaves and mint leaves.
