Chha Kdam
Chha Kdam is a popular Cambodian dish made with stir-fried crab and Kampot pepper.
Ingredients - Serves 2
- Cilantro - 2 tablespoons, chopped
- Scallions - 2, chopped
- Vegetable oil - 2 tablespoons
- Sugar - 1 teaspoon
- Oyster sauce - 1 tablespoon
- Fish sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Kampot pepper - 1 tablespoon, freshly ground
- Crab - 2 medium-sized, cleaned and cracked
Let's Get Started
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the minced garlic and grated ginger, and stir-fry for 1 minute.
- Add the crab and stir-fry for 2-3 minutes, until the crab turns pink.
- Add the fish sauce, oyster sauce, sugar, and freshly ground Kampot pepper. Stir-fry for another 2 minutes.
- Add the chopped scallions and cilantro, and stir-fry for an additional 1 minute.
- Remove from heat and transfer to a serving dish.
- Serve hot as an appetizer or with steamed rice as a main course.
