Let's Get Started

  1. Clean the duck and pat dry with paper towels.
  2. Mix together the salt, black pepper, and garlic powder. Rub the spice blend all over the duck, inside and out.
  3. Preheat your smoker to 225°F and add the cherry wood chips.
  4. Place the duck in the smoker and smoke for about 4 hours, or until the internal temperature reaches 165°F.
  5. In the last 30 minutes of smoking, glaze the duck with honey.
  6. Remove the duck from the smoker and let it rest for 15 minutes before carving.
