Cherry Macarons
These delicate and sweet cherry macarons are perfect for a special occasion or just because. The macarons are filled with a luscious cherry buttercream for a burst of flavor in every bite.
Ingredients - Serves 24
- Cherry jam - 1/4 cup
- Unsalted butter - 1/2 cup
- Cherry extract - 1/2 teaspoon
- Red gel food coloring - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, food coloring, and cherry extract, and continue beating until stiff peaks form.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to form a skin.
- Bake for 15 minutes, or until the macarons are set.
- Let the macarons cool completely on the baking sheets.
- In a small bowl, beat the butter until creamy. Add the cherry jam and beat until smooth.
- Transfer the cherry buttercream to a piping bag fitted with a round tip and pipe a small amount onto half of the macarons. Top with the remaining macarons to form sandwiches.
