Ingredients - Serves 6

Let's Get Started

  1. Soak the lotus seeds, white fungus, and barley in separate bowls of water for at least 2 hours.
  2. In a large pot, bring the 2 litres of water to a boil.
  3. Add the soaked ingredients, dried longan, and pandan leaves into the pot.
  4. Simmer the mixture on low heat for about 1.5 hours.
  5. Add the rock sugar and stir until it is fully dissolved.
  6. Continue to simmer the soup for another 30 minutes.
  7. Turn off the heat and let the soup cool before serving.
