Cheesy Cauliflower Gratin

  1. Preheat the oven to 375°F.
  2. Steam the cauliflower florets until tender, about 5 minutes.
  3. In a large saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  4. Stir in the flour until well combined. Gradually whisk in the milk until smooth. Bring to a simmer and cook until thickened, about 2 minutes.
  5. Remove from heat and stir in the cheddar cheese, half of the Parmesan cheese, salt, and pepper.
  6. Add the steamed cauliflower to the sauce and stir until well coated.
  7. Transfer the cauliflower mixture to a baking dish. Top with the breadcrumbs and the remaining Parmesan cheese.
  8. Bake for 20 minutes, or until the top is golden and bubbly.
