Che Do Den
Chè Đỗ Đen is a traditional Vietnamese dessert made with black beans, coconut milk, and sweeteners.
Ingredients - Serves 4
- Roasted sesame seeds - 1 tablespoon
- Tapioca pearls - 1/4 cup
- Salt - 1/4 teaspoon
- Coconut milk - 1 cup
- Rock sugar - 1/4 cup
- Palm sugar - 1/2 cup
- Water - 4 cups
- Black beans - 1 cup
Let's Get Started
- Rinse the black beans and soak them in water overnight.
- In a large pot, add the soaked black beans and 4 cups of water. Bring to a boil, then reduce the heat and simmer for 45 minutes or until the beans are soft.
- In a separate pot, cook the tapioca pearls according to the package instructions. Drain and set aside.
- Add the palm sugar, rock sugar, and salt to the pot with the cooked black beans. Stir until the sugars are dissolved.
- Add the coconut milk to the pot and simmer for an additional 10 minutes.
- To serve, divide the cooked tapioca pearls into serving bowls. Ladle the black bean soup over the pearls.
- Sprinkle roasted sesame seeds on top for garnish.
- Enjoy the Chè Đỗ Đen warm or chilled!
