Ginataang Bilo Bilo
Ginataang Bilo Bilo is a traditional Filipino dessert made with glutinous rice balls, sweet potatoes, bananas, and tapioca pearls cooked in coconut milk.
Ingredients - Serves 6
- Salt - 1/4 teaspoon
- Pandan leaves - 2 leaves
- Brown sugar - 1/2 cup
- Coconut milk - 2 cups
- Tapioca pearls - 1/2 cup
- Bananas - 2, sliced
- Sweet potatoes - 1 cup, cubed
- Water - 1/2 cup
- Glutinous rice flour - 1 cup
Let's Get Started
- In a bowl, combine glutinous rice flour and water. Mix until a dough forms.
- Roll the dough into small balls, about 1/2 inch in diameter.
- In a pot, bring water to a boil. Add the glutinous rice balls and cook until they float to the surface. Remove from heat and set aside.
- In a separate pot, bring coconut milk to a simmer. Add pandan leaves and let it infuse for 5 minutes.
- Add sweet potatoes and cook until tender.
- Add bananas, tapioca pearls, brown sugar, and salt. Stir well to combine.
- Add the cooked glutinous rice balls to the pot and simmer for another 5 minutes.
- Remove pandan leaves before serving.
- Serve hot or chilled. Enjoy!
